I love mole but traditional recipes take way too much work and time to make. After much experimentation, here's my quick and easy way to make a delicious (and versatile) mole sauce.
Ingredients:
Extra Virgin Olive Oil
2 Cans Hunt's Diced Tomatoes
1 Chili Seasoning Packet (I like 2 Alarm Chili Kits)
1 Large Yellow Onion, finely diced
4 T Hershey's Unsweetened Cocoa
1 T Cinnamon
1 T Sugar Substitute (I prefer Truvia or Splenda)
1/2 T Garlic, minced
Salt and Pepper to taste.
Instructions:
Sauté onion and garlic in olive oil till tender. Add in remaining ingredients and slowly bring to a boil.
Reduce heat and simmer.
Add in shredded chicken and serve in burritos or smother grilled chicken breasts and serve with calabacitas.
