Brussel Sprouts with Black Bean Sauce

This dish is fabulous. It's funky, abrasive and not afraid to get in your face and call your mama ugly.







Ingredients


Extra Virgin Olive Oil (EVOO)
Crushed Red Chili Pepper Flakes
Chopped, Cooked Bacon
2 T Black Bean Sauce (or Black Bean Garlic Sauce) (available in Asian aisle at most grocery stores)
1/2 T Crushed Garlic (omit if you use Black Bean Garlic Sauce)
Freshly ground Black Pepper
Sriracha Chili Sauce (also available on the Asian aisle at most grocery stores)


Preparation


Wash the brussel sprouts and remove any stems and loose leaves. Quarter the brussel sprouts length wise.
Add the EVOO and crushed red pepper flakes to a pan and bring to medium high heat.
Add the garlic and chopped, cooked bacon and saute for a couple minutes.
Next add the brussel sprouts to the pan and sauté until they start to brown.
Add the black bean garlic sauce and stir until all the brussel sprouts are coated.
Finally, add in the fresh ground black pepper and toss.
(Don't add salt. The black bean sauce is already salty.)
Sauté for another 30 seconds or so and then remove from heat and serve immediately.
Top with a few dots of Sriracha - the color is amazing; the flavor of this dish will knock you on your ass.
