Southwest Hamburger Bake Casserole

This is a spicy southwest twist on my Chinese Hamburger Bake casserole. Easy and great comfort food.


Ingredients

2 to 2.5 lbs Hamburger
2 – 3 T. Extra Virgin Olive Oil
1 C. Onion, finely diced
1 T. Garlic, minced
Jalapeno or Habanero, to taste, finely chopped
1 Can Cream of Chicken Soup
1 Can Cream of Celery Soup
1 Can Cream of Mushroom Soup
1 Can Corn, drained
2 C. Minute Rice
2 Cans of Water
2 T. Southwest Seasoning (Emerils, etc.)
2 T. Worcestershire
1 T. Smoked Tabasco (or other chipotle sauce)
1 t. Garlic Powder
1 T. Crushed Red Pepper (depending on heat preference)
Salt and Pepper
Durkee French Fried Onions


Directions

Brown hamburger in large sauce pot and remove to bowl. In large sauce pot add in olive oil and sauté onion till almost tender then add garlic and habanero and sauté about 5 minutes more. Add browned hamburger and all remaining ingredients except french fried onions into pot and mix thoroughly.

Pour mixture into a 10 x 13 baking dish. Cover with foil and bake about 50 minutes at 350°.

Remove foil and top with french fried onions. Bake uncovered for an additional 10 minutes.
