Southern Spoon Bread

This makes a fantastic compliment to spicy southwest dishes.


Ingredients

2 ½ C. Sweet Milk
1 C. Stone Ground Corn Meal
4 Eggs
2 T. Butter
½ t. Baking Powder
½ t. Salt


Directions

Scald milk and stir the corn meal in slowly. Continue stirring until quite thick. Remove from heat and stir in butter.
Separate eggs. Whip yolks until light. Stir in baking powder and add to corn meal mixture. Whip whites until they stand in peaks. Fold whites into mixture.
Bake in greased 1 ½ Quart baking dish at 375° for 45 minutes or until puffed and brown.

Serve immediately with lots of butter.
