Chicken Tortilla Casserole

This is one of my favorite comfort food casseroles.


Ingredients

1 Stick Butter
1 lb Boneless White Meat Chicken, coarsely chopped or shredded
1 lg Yellow Onion, finely diced
Green Chiles, finely chopped (fresh or frozen)
Jalapenos, finely chopped (optional)
2 Can Cream of Chicken Soup
1 Can Cream of Celery Soup
1 Can Cream of Mushroom Soup
Tortilla Chips
3 to 4 C. Finely Shredded Cheese (Colby / Monterey Jack, Longhorn, or Mexican Cheeses)


Directions

Sauté onion in butter until tender. Mix in chicken, chopped chiles and soups (also chopped jalapenos if desired). Allow to simmer.

Add layer of chicken, chile and soup mixture to bottom of baking dish followed by a layer of tortillas, then cheese. Repeat this process but finish with the final layer being the chicken, chiles and soup mixture.

Bake 30 minutes at 350°. During last 5 minutes add more cheese to top.
